Ingredients
- 4 large eggs
- ¼ cup millet flour
- ¼ cup gluten-free oat flour
- ¼ cup coconut flour
- ¼ cup potato starch
- 2 tablespoons granulated sugar
- ⅓ cup coconut oil, plus more for greasing the waffle iron
- 1 vanilla bean pod
- ½ cup sparkling apple cider
- Grilled apples, for topping
- Chocolate shavings, for topping
- Pumpkin puree, for topping

Preheat the waffle iron to medium-high and grease it with oil.

Separate the egg yolks from the whites. Beat the egg whites until stiff. Set aside.

In a large bowl, add all flours, potato starch, and sugar, and whisk to combine.

Add egg yolks and oil, and mix well until incorporated with the dry ingredients. Split the vanilla pod in half lengthwise and scrape the seeds into the mixture.

Gradually add apple cider, stirring gently with a spatula. Gently stir in the beaten egg whites.

Once the waffle iron is hot, ladle in the batter. Follow the manufacturer’s instructions for cooking. Cook until the waffles are golden brown.

Serve immediately, topped with grilled apples, chocolate shavings, and pumpkin puree.
