Ingredients:
Main Ingredients
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 0.5 tsp ground turmeric
- 0.25 tsp cayenne pepper
- 2 large carrots, sliced
- 1 large sweet potato, peeled and cubed
- 1 can chickpeas, drained and rinsed 15 oz
- 1 can diced tomatoes 14.5 oz
- 4 cups vegetable broth
- 0.25 cup dried apricots, chopped
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:

Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.

Stir in cumin, coriander, cinnamon, turmeric, and cayenne pepper. Cook for 1 minute.

Add carrots, sweet potato, chickpeas, tomatoes, and vegetable broth. Bring to a boil.

Reduce heat and simmer for 30 minutes, until vegetables are tender.

Stir in dried apricots, season with salt and pepper. Cook for another 5 minutes.

Serve hot, garnished with fresh cilantro.
