Barbara is always on the lookout for recipes to fix in her Pampered Chef Deep Covered Baker. Lo and behold, she found the perfect one in her trusty Pot O’Gold cookbook. Big shout out to Dorothy Maher for this delicious and flavorful pork chops recipe.

If you don’t have a deep covered baker, use your favorite baking dish. Just be sure to cover the dish tightly with foil before baking the southern pork chops.

Tips for Tender Baked Pork Chops

Pork chops can be tricky. Baking them low and slow is a great way to ensure a moist pork chop. This is the basis of many of our favorite baked pork chop recipes.

Using a lower oven temperature as this recipe calls for or a slow cooker are two great methods for baking pork chops.

Should I cover pork chops with foil when baking?

Yes, to prevent a dry, tough pork chop, cover the baking dish with aluminum foil during the baking process. This will keep all the moisture from evaporating out during the cooking process.

How do you know if your pork chops are done?

The easiest way to judge whether your pork chops are cooked thoroughly is with a meat thermometer.  The USDA recommends cooking pork to 145 degrees F as an internal temperature.  Using a meat thermometer will ensure you don’t cook too long creating a dry, tough pork chop.

As a rule of thumb, meat continues to cook when it comes out of the oven. Try cooking your pork chops to 140 degrees F, and then let the pork chop rest at room temperature for 5 to 10 minutes. Allowing this rest time ensures the pork will reach 145 degrees F and that the juice will stay in the meat when cut.

My pork chops are slightly pink in the middle. Are they ok to eat?

Yes, pork chops tend to be a little pink if cooked correctly.  Use your meat thermometer to judge the doneness, not the color of the pork.

How to Make Southern Baked Pork Chops

Step by Step Instructions

  1. Preheat oven to 350 degrees F.
  2. Season bone-in pork chops or boneless pork chops with salt and black pepper.
  3. Arrange pork chops in a pan or baking dish; arrange onions over top pork.
  4. In a small bowl, combine cream of chicken soup, Worcestershire sauce and ketchup; pour over pork chops and onions.
  5. Cover and bake for 45 minutes or until fork tender. Cooking time may vary depending on the thickness of the pork chops. For the best results, use an instant read thermometer, and cook until 145 degrees F.

  • We used center cut pork chops that were 3/4-inch thick. You can use chops that are 1-inch thickness, but the cooking time might need to be adjusted. On the flip side, thinner pork chops can be used too.
  • Salt and pepper them generously before adding them to the baking dish.  Be sure to include the thinly-sliced onion in this dish. For added flavor, sprinkle with garlic powder, onion powder or paprika too.
  • If you have picky eaters, you can definitely serve the pork chops without the onions but they add so much flavor that you don’t want to leave them out totally.
  • The sauce over these 4 ingredient oven baked pork chops is super simple. Just mix together a can of cream of chicken soup, some ketchup and Worcestershire sauce and pour over the pork chops and onions.
  • If you don’t have a Pampered Chef Deep Covered Baker, no big deal. Just use a glass baking dish and cover with foil while baking.
