Ingredients:

- 1 cup brown rice uncooked
- 2 cups vegetable broth
- 1 cup shredded cheese cheddar or your choice
- 1 cup broccoli florets chopped
- 1 cup mushrooms sliced
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 tbsp olive oil
- to taste salt and pepper
Instructions:

Preheat your oven to 375°F (190°C).

In a large mixing bowl, combine the uncooked brown rice and vegetable broth.

Stir in the chopped broccoli, sliced mushrooms, chopped onion, minced garlic, and olive oil.

Season with salt and pepper to taste.

Transfer the mixture to a baking dish and cover with aluminum foil.

Bake in the preheated oven for 45 minutes, or until the rice is tender and the liquid is absorbed.

Remove the foil, sprinkle the shredded cheese on top, and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
