I love cookies. I’d almost rather eat a cookie than any other dessert. Chocolate chip cookies are my favorite especially the way Mom makes hers (check out that recipe here). But now that I’ve discovered this treasured Cowboy Cookie recipe, Mom’s have some competition.
This cowboy cookie recipe has oats (old fashioned or quick oats), chocolate chips, and Toffee Bits (Heath). While some cowboy cookie recipes feature other ingredients, this is a cowboy cookie without coconut and nuts.
Toffee chips are typically found in bags in the same aisle as the other chocolate chips and baking supplies. The Heath brand are easy to find, or get them in our Amazon Store (check out our Pantry Essentials section). If all else fails, buy larger Heath bars and chop them into small pieces.

How to Make Cowboy Cookies with Toffee Bits
Step by Step Instructions
- In a large mixing bowl, cream softened butter, brown sugar, white sugar until smooth with a stand mixer or electric mixer.
- Add eggs and vanilla and mix until combined.
- In a separate bowl, combine flour, oats, baking soda, baking powder, and salt.
- Add in small quantities of the flour mixture to wet ingredient, blending until combined in between each.
- Stir in chocolate chips and toffee bits.
- Scoop into small balls, place on baking sheet and bake in a preheated 350 degree F oven for 10 to 15 minutes.
- Let cool for a couple minutes on the pan before removing to a rack to cool completely.

- 1 cup butter, softened
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups flour

Instructions

Preheat oven to 350 degree F.
