Ingredients:
Main Ingredients
- 2 lbs beef stew meat cut into chunks
- 2 tbsp olive oil
- 1 large onion chopped
- 3 cloves garlic minced
- 2 cups beef broth
- 1 cup red wine
- 1 can diced tomatoes (14.5 oz)
- 2 tsp dried oregano
- 1 tsp dried thyme
- 2 cups potatoes peeled and cubed
- 2 cups carrots sliced
- 1 cup kalamata olives pitted and halved
- to taste salt and pepper
Instructions:

Heat olive oil in a large pot over medium heat. Add beef and brown on all sides. Remove beef and set aside.

In the same pot, add onions and garlic. Cook until softened.

Return beef to the pot. Add beef broth, red wine, diced tomatoes, oregano, and thyme. Bring to a boil.

Reduce heat, cover, and simmer for 1 hour.

Add potatoes and carrots. Simmer for another 30 minutes or until vegetables are tender.

Stir in kalamata olives. Season with salt and pepper to taste. Serve hot.
