Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 1 can Black Beans drained and rinsed
  • 1 cup Salsa
  • 2 cups Shredded Cheddar Cheese
  • 1 cup Corn frozen or canned
  • 1 package Taco Seasoning
  • 1 cup Sour Cream
  • 1 bag Tortilla Chips crushed

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the taco seasoning, black beans, corn, and salsa to the skillet. Stir to combine and cook for another 5 minutes.
  • In a baking dish, layer half of the crushed tortilla chips, followed by the beef mixture, and then half of the shredded cheese.
  • Repeat the layers with the remaining tortilla chips, beef mixture, and cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes before serving. Top with sour cream if desired.

Notes:

This casserole can be made ahead of time and refrigerated until ready to bake.
