Ingredients:
Main Ingredients
- 2 lbs Beef Stew Meat cut into chunks
- 1 large Onion chopped
- 3 cloves Garlic minced
- 2 cups Beef Broth
- 1 can Diced Tomatoes 14.5 oz can
- 2 tsp Ground Cumin
- 1 tsp Chili Powder
- 2 cups Potatoes peeled and diced
- 1 cup Carrots sliced
- 1 cup Corn Kernels
- to taste Salt and Pepper
Instructions:

1. In a large pot, heat some oil over medium heat. Add the beef and cook until browned on all sides.

2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.

3. Pour in the beef broth and diced tomatoes. Stir in the cumin and chili powder. Bring to a boil.

4. Reduce the heat to low and let it simmer for about 1 hour.

5. Add the diced potatoes, sliced carrots, and corn kernels. Continue to simmer for another 30-40 minutes, or until the vegetables are tender.

6. Season with salt and pepper to taste. Serve hot.
Notes:
This stew is even better the next day. Store leftovers in the fridge and reheat before serving.
