Chocolate Chip Molasses Bars Recipe

I love a good molasses cookie, and these chocolate molasses cookies do not disappoint.  The dense, soft texture melts in your mouth. And the best part is the addition of chocolate morsels. The addition of molasses in a cookie give it a distinct but not too sweet flavor and it always keeps the cookie moist and soft.

This chocolate chip molasses bars recipe originates from Farm Journal: Homemade Cookies Cook Book.  It’s an oldie but goodie from mom’s bookshelf.  Our dad’s favorite Chocolate No Bake cookies come from this same book.

Old-fashioned Molasses Bar Cookies

I’m cooking up a storm right now, because it’s the holiday season, and baking is good for my soul.  On top of that, the church bake sale is going on, and I like to share my goodies and the calories.  One cookie for me, and the rest of the pan for church.

Bar cookies are one of my favorites. They are quicker to make because you don’t have to take time to drop each individual cookie onto the cookie sheet.  Some cookie bars use a 13 x 9 x 2 inch baking dish and others use a jelly roll pan.  It’s worth investing in each of these, particularly ones with a lid.  Easy storage option: bake the cookie, let it cool, and put the lid on it.   • Unsalted Butter
  • Molasses
  • Light Brown Sugar
  • Large Egg
  • All Purpose Flour
  • Baking Soda
  • Salt
  • Semi-Sweet Chocolate Chips

How to Make Chocolate Molasses Cookies

Step by Step Instructions

  1. Heat butter, molasses and brown sugar over low heat; whisk until sugar is dissolved. Let cool completely.
  2. In a large bowl, beat egg until light and airy; add to the molasses mixtures.
  3. Sift flour, baking soda and salt; stir in chocolate chips. Add dry ingredients to the wet mixture.
  4. Pour dough into a prepared 13 x 9 inch pan, and bake for 20 minutes. (It’s ok if it doesn’t quite spread to each end. It will spread as it bakes.
  5. Let cool in pan.

Storage Instructions

Store in an airtight container at room temperature.
