Ingredients:
Main Ingredients
- 2 pounds beef stew meat cut into chunks
- 1 tablespoon olive oil
- 1 onion chopped
- 3 cloves garlic minced
- 2 cups beef broth
- 1 cup Guinness beer
- 2 large carrots sliced
- 2 large potatoes diced
- 1 teaspoon dried thyme
- to taste salt
- to taste pepper
Instructions:

Set the Instant Pot to sauté mode and heat the olive oil. Add the beef and brown on all sides.

Add the onion and garlic, and sauté for a few minutes until fragrant.

Pour in the beef broth and Guinness beer, scraping the bottom of the pot to deglaze.

Add the carrots, potatoes, thyme, salt, and pepper.

Close the Instant Pot, set to high pressure for 35 minutes.

Once done, allow for a natural pressure release for 10 minutes before quick releasing the remaining pressure.

Notes:
For a thicker stew, you can add a slurry of cornstarch and water at the end and sauté for a few more minutes.
