Roasted Beets and Onion

Nothing can be simpler than roasting vegetables. However, adding one simple ingredient can make a huge difference in flavor.

Ingredients

  • 2
    bunches
    fresh beets
    (2-1/2 to 3-inches round, trimmed and peeled
  • 1/2
    large yellow onion
    sliced to 1/4-inch wide
  • 1
    tablespoon
    avocado oil
    (or high-smoke point oil)
  • Salt & freshly ground pepper
    to taste
  • 1
    tablespoon
    white balsamic vinegar
    (or dark)

Instructions

  1. Preheat the oven to 400 degrees F.

  2. Cut the beets into 4 to 6 wedges, depending upon their size, trying to keep the wedges similar in size for even tenderness.

  3. Transfer the beets and onion to an unoiled baking sheet and drizzle with enough oil to coat the vegetables.

  4. Season with salt and pepper and bake on the center shelf for 35 to 40 minutes or until the beets meet your desired tenderness, flipping the vegetables over halfway through roasting.

  5. During the last 10 minutes remove from the oven and drizzle the vinegar over the top and stir. Return the pan back to the oven.

  6. Remove from the oven and transfer to serving plates or a bowl for guests to help themselves. You may garnish the top with your favorite fresh, green herb such as parsley, basil. theme, etc.
