Remember when we were so excited that Cinco De Mayo falls on Taco Tuesday this year?   Such simpler times, those were.  I mean, I am still looking forward to it even though I won’t be sipping margs at my favorite Mexican restaurant…but celebrating any day I can with delicious food is basically my life’s goal, so bring it!  Oh- and the weather is supposed to be beautiful here this weekend.  So much to celebrate!

In honor of Cinco De Mayo AND Taco Tuesday I included my brand new Taquitos and Easy Cheese Sauce on the meal plan for Tuesday!! So. Excited.

All five dinners and a breakfast are already loaded into a *NEW- 7 day template* meal planning spreadsheet for you here – just add in lunch and your snacks.  If you aren’t following the meal plan exactly or can’t find certain ingredients in your store still, that’s ok.  We are all just doing our best.  Swap out what you need, and the containers will auto adjust! (Don’t forget to make a copy of the spreadsheet – you won’t be able to access it any other way).

This week’s 21 Day Fix meal plan and WW Meal plan- 

Breakfast: Low Carb Cauliflower Hash Browns (21 Day Fix)

21 Day Fix: 1 GREEN, 1/2 RED, 1 TSP (per serving) | WW: Green- 4 points, Blue- 2 points; Purple-2 points (per serving) | [Recipe makes 1 serving]

Note- recipe only makes 1 serving and will need to be multiplied to use for breakfast all week.

Groceries:

  • 1 cup of cauliflower rice (I’ve used both fresh and frozen)
  • 1 egg
  • 1/2 tsp of everything but the bagel seasoning
  • 1 tsp butter, vegan butter, or ghee

Monday: 21 Day Fix Grilled Lemon-Herb Pork Chops with Easy Gluten-free Mediterranean Chickpea Salad and Loaded Cauliflower Mash

Pork chops21 Day Fix : 1 RED, 1/2 tsp (per serving) |  WW Blue: 5 points (per serving) | [Recipe makes 4 servings]

Salad- 21 Day Fix: 1 YELLOW, 1 1/2 GREEN, 1/2 ORANGE, 1/6 BLUE (per serving) | WW Blue: 2 points (per serving) | [Recipe makes 6 servings]

Cauliflower – 21 Day Fix: 1 GREEN, 1/2 RED, 1/2 BLUE, 1 TSP (per serving) | WW Blue: 5 points (per serving) | [Recipe makes 4 servings]

Groceries: 

Pork chops

  • 1 lb boneless pork chops
  • 1 lemon
  • olive oil
  • fresh garlic
  • salt
  • dried oregano
  • fresh herbs (optional)

Salad & Dressing

  • 2 can chickpeas (3 cups)
  • 1 green bell pepper 
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 cups chopped cucumber (about one whole cucumber)
  • 1 cup grape tomatoes
  • 3 T diced red onion (or more to taste)
  • 2 T fresh chopped parsley
  • ⅓ cup of feta (can double if you like or omit for vegan!)
  • Optional – 6 T olives (about 30)
  • 3 T olive oil
  • 2 T red wine vinegar
  • sprinkle of salt and fresh pepper
  • 1 T fresh oregano or 1/2 tsp dried oregano
  • 2 tsp fresh basil  or 1/4 tsp dried basil
  • sprinkle of garlic powder
  • 1/2 lemon

Cauliflower Mash

  • 8 slices of turkey bacon
  • 1 head of cauliflower
  • 2 T parm cheese
  • 4 tsp butter
  • salt
  • fresh chives
  • ⅔ cup of cheddar
  • 1 cup broth (can sub water)

Tuesday:  Taquitos and Easy Cheese Sauce with 21 Day Fix Mexican Street Corn Salad

Taquitos21 Day Fix : For 2 Corn tortillas + 1/3 cup of cheese sauce (2.5 T): 1/2 red, 1/2 green, 1 yellow, 1 blue, 1 tsp; OR For 2 Flour tortillas + 1/3 cup of cheese sauce (2.5 T): 1 red, 1/2 green, 2 yellow, 1 blue, 1 tsp |  WW Green, Blue, & Purple: 3 points per taquito and 3 points for 1/6 cup of cheese sauce | [Recipe makes ~6 servings]

Salad- 21 Day Fix: 1 YELLOW, 1 TSP, trace green and blue (per serving) | WW Blue: 2 points (per serving) | [Recipe makes 8 servings]

Groceries:

Taquitos & Cheese Sauce

  • 1lb of ground meat of your choice (we using love lean ground beef)
  • 3 cups of cauliflower rice (can be frozen)
  • 1 cup of low sodium tomato sauce
  • 1–2 T of salt free taco seasoning
  • salt
  • 12 corn tortillas
  • 2.5 T of gluten free flour blend
  • 2.5 T vegan butter, butter, or ghee
  • 1.5–2 cups of unsweetened original almond milk
  • 2 cups shredded cheddar cheese
  • jalapeno
  • chili powder

Salad & Dressing

  • 4 cups of corn (can be fresh off the cob, frozen, or canned)
  • cooking oil spray
  • 3 tsp of butter
  • 2 cloves of garlic
  • 1/4 red onion
  • 1 jalapeño
  • cilantro
  • 1/3 cup of Cotija or Feta cheese 
  • chili powder
  • Himalayan salt
  • 2T mayo
  • 1T plain Greek yogurt
  • 1lime

Wednesday: Spice Rubbed Instant Pot Whole Chicken | Spice Rubbed Crock Pot Whole Chicken with leftover Easy Gluten-free Mediterranean Chickpea Salad and steamed or roasted broccoli 

Chicken 21 Day Fix: 1 RED (per serving) |  WW Freestyle: Zero or 1 point (per serving) | [Recipe makes 6 serving]

Salad- 21 Day Fix: 1 YELLOW, 1 1/2 GREEN, 1/2 ORANGE, 1/6 BLUE (per serving) | WW Blue: 2 points (per serving) | [Recipe makes 6 servings]

Chicken

  • 1 Whole Chicken – 4 to 5 lbs for a 6 quart Instant Pot and 5-7 lbs for an 8 quart Instant Pot or Crock Pot
  • 1 onion
  • 1 lemon
  • paprika
  • cayenne
  • onion powder
  • thyme
  • garlic powder
  • salt
  • 1 cup chicken broth or water (for IP)

Broccoli

Thursday: Southwest Chicken Skewers {21 Day Fix} served with 21 Day Fix Mexican Street Corn Salad

Friday:  Instant Pot Sausage Broccoli Pasta (21 Day Fix)

21 Day Fix: 1 RED, 1/2 to 1 GREEN (depending on how much broccoli you use), 1 YELLOW, 1/2 BLUE, 1/2 TSP (per serving) | WW Blue: 9 points (per serving) | [Recipe makes 4 servings]

Groceries:

  • 2 tsp olive oil
  • 1 lb spicy or sweet Italian poultry sausage
  • 1/2 onion
  • 4 cloves of garlic
  • 1 1/2 cups of uncooked gluten free pasta
  • 24 cups of fresh broccoli florets
  • 2 cups of low sodium chicken broth or stock
  • crushed red pepper
  • 2/3 cup Parmesan cheese
