Mexican-Style Grilled Corn on the Cob

Ingredients
- 6 medium ears of corn, husks and silk removed
- 1 cup mayonnaise
- 2 cups crumbled queso fresco cheese, divided use
- 1 teaspoon chili powder, plus more for sprinkling

Preheat a grill to medium.

Arrange the corn on the grill. Grill for about 10 minutes, turning regularly, until grill marks appear on each side. Remove from the grill and let cool slightly.

Mix together the mayonnaise, 1½ cups of the cheese, and chili powder. Spread the mayonnaise mixture on each ear of corn. Sprinkle with the remaining cheese and chili powder.
