I originally published this recipe back in 2018 and since that time have gone through seasons of being totally obsessed with overnight oats. For weeks it’s all I’ll eat. Then I’ll revert back to avocado on toast only to come back to oats as I find myself craving something sweet to start the day.

These overnight oats are creamy, customisable and completely dairy free. The base recipe is simple, but you can always mix it up with your favourite flavours and toppings.

- Rolled oats – use old-fashioned rolled oats for the best texture. Quick oats turn mushy, and steel cut oats won’t soften properly.
- Dairy free milk – I usually use oat milk, but almond or soy milk work great too. Use whatever you have on hand.
- Coconut yoghurt – this keeps the oats creamy and totally dairy free. Use a vanilla flavoured version or a thick Greek-style for extra richness.
- Maple syrup – adjust to taste depending on how sweet your yoghurt is.
- Vanilla – just a little bit of vanilla extract ensures a delicious vanilla flavour.
- Chia seeds – not only do they give a pudding-like texture, but they’re packed with fibre and omega-3s. You can use white or black chia seeds, they work the same.

Step-By-Step Instructions
Making dairy free overnight oats is all about a little planning ahead as the name suggests, but its a great recipe to scale up and prep in batches for the week ahead as they will last up to four days in the fridge.
To get started, you’ll need some jars or small containers with a lid to keep the oats in.
👉Tip! If you’re making a big batch, I recommend mixing it all together in a large bowl and then dividing it between your jars otherwise for single serves, it’s really easy to just add everything directly to your jar and mix it in there to avoid any unnecessary dishes.

Step 1: Mix everything together in the jar, and let sit for a couple of minutes before mixing again. This is similar to making a matcha chia pudding where we want to give the chia seeds time to absorb some liquid so they are easier to mix.
Step 2: Place on the lid and pop your oats in the fridge overnight.
Step 3: In the morning you can take off the lid and top the jar with fresh fruit, granola, nuts and a drizzle of extra maple syrup if you’re feeling sweet.

Honestly this breakfast could not be easier and is so filling and delicious – it’s almost treat-like for breakfast so puts me in a really good mood to start the day.
Plus thanks to the combination of the oats and chia seeds, I don’t get hungry and it keeps me full right through to lunch.
