Ingredients:
Main Ingredients
- 2 lbs Beef stew meat cut into chunks
- 2 tbsp Olive oil
- 1 large Onion chopped
- 1 large Green bell pepper chopped
- 3 cloves Garlic minced
- 2 cups Tomato sauce
- 2 cups Beef broth
- 2 large Potatoes peeled and cubed
- 1 tsp Ground cumin
- 1 tsp Dried oregano
- 1 tsp Salt to taste
- 1 tsp Black pepper to taste
Instructions:

Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.

Add onion, bell pepper, and garlic. Cook until vegetables are tender.

Stir in tomato sauce, beef broth, cumin, oregano, salt, and pepper. Bring to a boil.

Reduce heat to low, cover, and simmer for 1 hour.

Add potatoes and continue to simmer for another 30 minutes, or until potatoes are tender.

Serve hot with rice or bread.
Notes:
This stew is even better the next day, so consider making it ahead of time.
