Super Easy Chocolate Covered Pineapple

Chocolate covered pineapple made with fresh pineapple, chocolate chips, and coconut oil. It takes just 10 minutes to make and tastes absolutely incredible!

Move over strawberries! Fresh pineapple dipped in chocolate is where it’s at! As a dietitian mom, it makes me so happy when I find a dessert recipe made with fresh fruit (or veggies, ofc 😉 ) that my kids love!

While I love making fruit salad, it’s always nice to change it up. And, because I often serve fresh fruit as a side dish with meals, my kids don’t always welcome it as a dessert.

But boy did that change when I served pineapple dipped in chocolate! There’s just enough chocolate to satisfy a sweet craving, but not so much that it takes away from the taste of pineapple.

So, now what you need to do is go find a nice and ripe pineapple, gather your chocolate chips and coconut oil, and you’re set to make this recipe!

  • Fresh Pineapple Pineapple contains manganese, copper, various vitamins (including vitamin C), and fiber. It also contains bromelain, an enzyme that is thought to help with digestion and reduce inflammation.
  • Chocolate Chips You can use either semi-sweet or dark chocolate for this recipe. I’ve even made this recipe using a combination of semi-sweet and dark chocolate chips. All ways are great! Mini chocolate chips can be used as well.
  • Coconut Oil To help the chocolate harden and for a nice tropical flavor. Coconut oil hardens at room temperature, which is why it works for this recipe. Do not substitute a different oil for coconut oil in this recipe.

Step-by-Step Instructions

  1. Peel a fresh pineapple and then slice it into rings. Next, slice the pineapple rings into halves or thirds.
  2. Remove the inner core using a paring knife or a pineapple tool.
  3. Place the chocolate chips and coconut oil in a microwave safe bowl. Microwave in 45 second increments, until the chocolate is melted. Stir after each 45 seconds. In total, it takes me 90 seconds to melt chocolate for this recipe.
  4. Use one hand to hold one end of each piece of pineapple over the melted chocolate. Use your other hand to coat the other end with chocolate using a spoon.
  5. Set chocolate coated pineapple pieces on a baking sheet lined with parchment paper.
  6. Optional: once all pieces have one end coated in chocolate, sprinkle a favorite topping onto the chocolate dipped pineapple ends. See below for topping ideas.
  7. Set baking sheet in the refrigerator for one to two hours to let the chocolate cool and harden.
  8. Remove from the refrigerator and either serve right away or move them to a resealable food-safe bag or container and refrigerate until you are ready to serve it.

Helpful Tips

  • Microwave times may vary for melting the chocolate.
  • Increase the amount of coconut oil to one tablespoon for a noticeable coconut flavor. The chocolate coating will be slightly thinner, but it still works and tastes so tropical!
  • This chocolate covered pineapple recipe is best enjoyed the same day you make it. After that, the juice from the pineapple softens the chocolate. We’ve enjoyed it up to three days later, but the chocolate wasn’t as hard.
  • Recipe prep time will vary depending on the method used for slicing the pineapple into rings.
  • Either cut pineapple by hand or use a pineapple tool. If using a pineapple tool, first make sure that it slices the pineapple into rings that are thick enough to be held and dipped in chocolate without falling apart.
  • If you buy a pineapple that is already peeled, all you need to do is slice it into rings and then remove the inner core.

Questions You May Have

Can I use canned pineapple?

I have not tried it, so I can’t say for sure. I think canned pineapple would work as long as the pineapple slices are drained really well. If you make this using canned pineapple, please let me know how it turns out!

How to store leftover pineapple chocolate pieces

I place them in a single layer inside of a resealable food-safe bag and refrigerate for up to three days.

How long does chocolate covered pineapple last?

I suggest eating this within three days. But it will be enjoyed the most the first day you make it.

Equipment

  • 1 bowl microwave safe
  • 1 spoon
  • 1 Bread knife for slicing pineapple
  • 1 Sheet pan

Ingredients
  

  • 4 pineapple slices Cut into thirds (three equal parts).
  • ½ cup chocolate chips (semi-sweet) 85 grams (weight)
  • 2 tsp coconut oil 6 grams (weight)

Instructions
 

  • Line a baking sheet with parchment paper.
  • Peel a fresh pineapple and slice it into rings. Use a paring knife or pineapple tool to remove the inner core from each slice of pineapple.
  • Slice the pineapple rings into halves or thirds.

Make the Chocolate Coating.

  • Place the chocolate chips and coconut oil in a microwave safe bowl. Place the bowl in the microwave and microwave in 20-30 second increments until the chocolate is melted. Stir after each 20-30 second increment. It will take about 70-90 seconds total to melt the chocolate completely.

Cover one end of each pineapple piece in chocolate.

  • Use one hand to hold one piece of pineapple at a time. With your other hand, use a spoon to cover all sides of the end of the pineapple piece with chocolate.
  • Set chocolate dipped pineapple pieces on the lined baking sheet in a single layer, giving at least one inch of space between pieces.
  • Optional: sprinkle a favorite topping onto the part of each pineapple piece that is coated with chocolate.
  • Set baking sheet in the refrigerator for one to two hours to let the chocolate cool and harden.
  • Once the chocolate has hardened, remove the sheet pan from the refrigerator and either serve the chocolate covered pineapple right away or carefully place the pineapple pieces in a resealable food-safe bag and place it back in the refrigerator.
