Easy Lunch Idea: BBQ Chicken Salad Recipe

I’m a creature of habit. I like to try new things, but once I try something & like it a lot, I stop trying other new things. This is particularly bad at restaurants- I order the exact same thing every time I go to every single restaurant. I’ll spend a few minutes looking at the menu, but it’s really just to pass the time as I walked in knowing what I want.

Not only do I get the same dish at restaurants, but I also choose to go to the same restaurants over & over. We recently discovered a new restaurant and my go-to order there is a BBQ Chicken Salad. It is so crazy delicious & has a ton of healthy ingredients, so I don’t feel bad going there for lunch every week. On the other hand, going out for lunch is a lot more expensive than eating at home, so I decided to make my own BBQ Chicken Salad!

To make things extra easy, I decided to use chicken nuggets. I couldn’t decide between spicy nuggets or cheesy nuggets, so I tried it with both. I prefer the spicy chicken in this recipe because it goes well with the BBQ sauce, but honestly they’re both really good in it.

I made both salads the same way except for which chicken nuggets I used, so the recipe below works for either choice. The great thing about this recipe is that you can customize it to your liking in more ways than just the nuggets! You can take out whatever you don’t like, and I’ve left the quantities blank for the toppings because they are such a personal preference.

BBQ Chicken Salad

Ingredients:

Romaine lettuce
Chicken Nuggets {plain, spicy or cheesy!}
Corn
Black beans
Chopped Tomatoes
Finely diced onions
BBQ Sauce
Ranch
Tortilla strips

Directions:

-Heat chicken nuggets according to package directions
-In a bowl, combine desired amounts of lettuce, BBQ sauce & ranch. Mix until lettuce is evenly covered.
-Add desired amount of each topping
-Cut chicken nuggets into thin strips, then place on top of salad
-Enjoy!


It’s such an easy lunch and includes so many healthy foods! There are 4 kinds of vegetables, and the chicken & beans provide some great protein. The flavors and textures all go really well together &it is by far one of my favorite meals.

Since Shane only goes to school for three hours, I don’t get a lot of time to make & eat lunch if I want to be able to get any work or cleaning done while he’s at school. I like to prep the ingredients for this salad {I dice the tomatoes & onions, microwave the frozen corn that I use, etc.} at the beginning of the week so that I can just quickly add all of the ingredients together during the week for a super quick lunch.

Microwaving the chicken nuggets takes just a minute & a half, and I can mix everything else together in that time. It’s the perfect easy lunch solution!

This lunch has quickly become my favorite, and Justin’s, too! Shane likes the cheesy nuggets by themselves or with ranch &I swear he could eat those for lunch & dinner every day if I let him!
