My latest s’mores creation is here and this may be my favorite creation yet… which is saying a lot if you know how freakin’ OBSESSED I’ve been with my No Bake S’mores Bars since I first created them years ago.
These S’mores Cookie Bars take everything you love about the nostalgic fireside treat, but transformed into a decadent, shareable dessert that’s easy to make in your own kitchen—no flames required.
With buttery graham cracker cookie dough, gooey marshmallows, and layers of melty chocolate, these bars are a crowd-pleaser for both kids and adults. Whether you’re baking for a BBQ, potluck, or just because, this is the kind of treat that disappears fast!
These S’mores Cookie Bars are…
- The best cookie bar ever
- Freakin’ delicious
- Everything you love about s’mores and classic cookie dough combined
Ingredients Used to Make This Recipe
- Salted Butter adds rich, creamy flavor and keeps the cookie bars moist and tender. Using salted butter also enhances the overall flavor balance.
- White sugar contributes to the sweetness and helps create a soft, chewy texture in the cookie dough.
- Brown sugar adds a deeper, caramel-like sweetness and a touch of moisture, which complements the graham cracker flavor.
- Vanilla extract boosts the cookie dough’s warm, sweet notes and enhances the flavor of the marshmallows and chocolate.
- Eggs bind the dough together and provide structure and richness. I have not tested an egg-free version!
- Baking soda & baking powder are the leavening agents used to help the cookie bars rise just enough to stay light while still being dense and chewy.
- All-purpose flour is the classic flour used when baking because it provides structure and stability to the cookie dough. I haven’t tested any substitutions yet.
- Graham cracker crumbs are the key to that signature s’mores flavor! These crumbs add a hint of crunch and a warm, toasty taste. To make, pulse graham crackers in a food processor or high-powered blender.
- Mini marshmallows toast up gooey and golden during baking, mimicking the classic roasted marshmallow in every bite. While marhsmallows can “disappear” when baked, you still get more of a chewy, marshmallow taste in these bars.
- Chocolate bars melt into rich, sweet layers between the dough and marshmallows, just like in a traditional s’mores.

FAQs About This Recipe
Can I use unsalted butter instead of salted?
Yes, just add an extra 1/4 teaspoon of salt to the dough to balance the flavor.

Classic Hershey’s bars are traditional for that true s’mores taste, but any milk chocolate or even semi-sweet chocolate bars will work. You can also substitute 2 cups (milk) chocolate chips if you do not have full bars.

This recipe has not yet been tested to be egg-free.
Do I need to chill the dough before baking?
Nope! This recipe is designed to go straight into the oven once assembled—perfect for quick prep.
How do I store leftover cookie bars?
Store leftover s’mores cookie bars in an airtight container at room temperature for up to 4 days. They also taste delicious when stored in the refrigerator, especially if your kitchen is warm during the summer. For longer storage, freeze these bars for up to 2 months.

- Yield: 32 squares 1x
Ingredients
Scale
- 1 cup (2 sticks) salted butter, softened
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 2 teaspoons pure vanilla extract
- 2 large eggs, at room temperature
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 1/2 cups all-purpose flour
- 1 1/4 cups graham cracker crumbs
- 1 7.5oz jar marshmallow fluff or 2 1/2 cups mini marshmallows
- 4 Hershey’s chocolate bars, or your favorite chocolate bars
Instructions
- Preheat the oven to 350F. Line an 9×13 baking dish with parchment paper and set aside.
- In a large bowl, using a handheld mixer, cream the butter with the white sugar, brown sugar, and vanilla extract until combined.
- Add the eggs, one at a time, mixing well in between.
- Add the baking soda, baking powder, salt and 1 cup of flour to the bowl. Using the handheld mixer on medium speed, mix the dry ingredients into the wet ingredients until just combined.
- Once incorporated, add the remaining flour and mix until just combined.
- Finally, mix in the graham cracker crumbs.
- Assemble the bars for baking. Press half of the cookie dough mixture into the bottom of the prepared baking dish. Add the marshmallow fluff or marshmallows on top, followed by the chocolate bars in an even layer. You may need to break the chocolate bars to cover the marshmallows. In a flat layer, add the remaining cookie dough on top, covering the chocolate and marshmallows. It doesn’t have to be perfect, remember cookie dough spreads when it bakes.
- Bake for 22-25 minutes until the top is golden brown. Remove from the oven and let cool for at least an hour before slicing. You can also chill the bars for a cleaner slice. Enjoy!
