- Balsamic Vinegar
- Lemon Juice

This recipe is naturally gluten-free, and it can be served with gluten-free pasta, bread, or a salad. This recipe does not use breadcrumbs; however, you can always add gluten-free breadcrumbs if you prefer.

This recipe only takes 10 minutes of prep time; however, the juicy chicken breast will marinate for at least 3 hours, so the total time will be significantly longer. Be sure to closely follow the instructions in the recipe card below.

- Extra Veggies – Add in extra veggies such as spinach, asparagus, or zucchini.
- Spice it Up – Use red pepper flakes or chili powder for a hint of spicy flavor.
- Dry the Mozzarella – If the mozzarella is full of liquid when you open yours, be sure to use a paper towel to pat dry the mozzarella before topping the chicken.
- Watch the cooking time – Use a meat thermometer to be sure to properly cook the chicken to an internal temperature of 165 degrees F without overcooking. This can take anywhere from 8-12 minutes depending on the thickness of the chicken breast and the air fryer that you are using.

- Pound the chicken – The chicken need to be have an even thickness, they can be pounded down with a mallet for even thickness or sliced in half if they are too thick.
- Use quality ingredients – Use high-quality ripe tomatoes, fresh basil leaves, and mozzarella cheese to get the best flavor. Even better, add a drizzle of balsamic vinegar just before serving.
- Olive Oil Spray – Keep some olive oil spray on hand to coat or spritz the chicken when it’s in the air fryer basket.
- Use a pan for the marinade – After you place your chicken and marinade in a ziploc bag, it’s best to place it in a pan and then into the fridge so that it does not leak.
How do you store leftovers?

Once fully cooled, store leftovers in an airtight container in the refrigerator for up to 3 days. When ready to serve, heat at 350 degrees F for 3-5 minutes until heated through.

Ingredients
- 1 Pound Boneless, Skinless Chicken Breast
- 2 Tbsp Olive Oil
- 2 Tbsp Balsamic Vinegar
- 1 Tsp Lemon Juice
- 1 Tsp Salt
- 1 Tsp Garlic Powder
- 1 Tsp Italian Seasoning
- 1/2 Tsp Ground Pepper
- 2 Fresh Basil Leaves
- 5 Slices Fresh Mozzarella, Halved
- 4 Slices Tomato, Halved
Instructions

Trim the chicken breast to equal thickness.

In a large bowl or Ziploc Bag, add the olive oil, vinegar, lemon juice, salt, garlic powder, Italian seasoning, and ground pepper. Mix to combine.

Take the basil leaves and roll them in your fingers to release the oils and then add them into the bowl or bag.

Add the chicken to the marinade and poke the chicken with a fork to coat it with the marinade.

Place in the fridge and chill for 3 hours or overnight.

Preheat the air fryer at 360°F for 3-4 minutes.

Add the chicken breast to the air fryer.

Air Fry at 360°F for 10-12 minutes. The chicken is fully cooked when the internal temperature reaches at least 165°F. If you are using thin chicken breast, check on them at 8 minutes.

Cover the chicken breast by placing a slice of fresh mozzarella and fresh tomato slices, alternating between the two.

Air Fry at 360°F for 2-3 minutes until the cheese is melted.
