Cobbler:

  • 1 ½ cups 1.1 GF flour or all-purpose
  • 1 tbsp baking powder
  • ½ tsp ground cinnamon
  • ½ cup sugar
  • 1 tsp vanilla extract
  • ½ tsp kosher salt
  • 8 tbsp cold butter
  • ¾ cup buttermilk
  • 1 cup Fisher pecans chopped

Pecan Pie Filling:

  • 1 ½ cups corn syrup
  • 2 tsp vanilla extract
  • ¼ tsp ground cinnamon
  • 3 eggs room temp
  • ¾ cup light brown sugar packed
  • 2 cups Fisher pecans chopped
  • tsp ground allspice
  • ½ tsp kosher salt

  • Preheat oven to 375°F. Butter a 7×10 baking dish (at least 2 ½” high).
  • In a large bowl, mix all the Pecan Pie Filling ingredients together and pour into the baking dish.
  • In a separate bowl, mix the Cobbler dry ingredients. Cut the cold butter into the dry mixture using a pastry cutter until pea-sized crumbs form.
  • Add the buttermilk and mix until incorporated.
  • Scoop equal-sized portions of the cobbler dough on top of the pecan pie filling.
  • Bake for 40-45 minutes until golden and set.
  • Remove and enjoy!
