How to make breakfast potatoes at home that taste like you have gone out to eat. This easy red breakfast potatoes recipe takes minutes to prep and they taste amazing.

Red Breakfast Potatoes

I didn’t realize just how much I loved going out for brunch or breakfast until the past few weeks. We have been staying at home to stay healthy for almost a month now and I miss my favorite brunch restaurants.

I keep dreaming about Caprese Eggs Benedict from Two Chicks which is one of my favorite restaurants in Reno.  They have delicious breakfast potatoes served with theCaprese eggs benedict covered in an epic hollandaise sauce. Just thinking about their eggs benedict makes my mouth water.

I also keep dreaming about a dutch baby from Oh Baby! Which is part of the Collective that houses multiple OKC restaurants in one building. I sadly learned that Oh Baby has now closed at The Collective but there are still a ton of great restaurants to check out.

When I woke up this morning and realized we have at least a few more weeks at home. So I decided it was time to dive into making my favorite breakfast/brunch food at home.

So to kick it off I made skillet breakfast potatoes with red potatoes and seasoning. Hello YUM! I paired the breakfast potatoes with leftover Bourbon Glazed Ham and scrambled eggs.

Not going to lie this was a really delicious way to kick off the day!

My current goal list includes learning to make eggs benedict, blueberry scones, corned beef hash, homemade pop tarts, huevos rancheros, shakshuka, and crepes.

I don’t know if I will get to all of these while we are staying home but my goal is to dive into as many as I can.

Breakfast Potatoes Seasoning

I used a combination of salt, pepper, and garlic powder for our breakfast potatoes. If you have a favorite blend of spices from a local restaurant that works great.

We use Squirrley spices from Waddell’s which is a great Spokane Restaurant a lot when cooking. They have the perfect blend of spices that are not super spicy but have great flavor.

You could also use smoked paprika, onion powder, or really any spice you enjoy.

Skillet Breakfast Potatoes

Ingredients

  • Red Potatoes
  • Olive Oil
  • Salt
  • Garlic powder
  • Black pepper

If you don’t want to use your own spices Amazon sells potato seasoning packets that you just dump over your breakfast potatoes.

Equipment

When you cut the potatoes make sure to get them small enough they are bite-size and can easily cook. I like to do a variety of sizes just so they look good in the pan. LOL!

You will want to use a saute pan that has a lid to make your breakfast potatoes. This way the oil does not splatter all over your kitchen and backsplash making a mess.

The larger the pan the more the potatoes can be spread out and get the crunchy bits on each potato. I feel like the best part of skillet breakfast potatoes is the combination of crunch outside and soft potato inside.

Be careful taking the lid off to stir the potatoes! The olive oil will be hot and bubbling a bit.

Ingredients

  • 5 Red Potatoes
  • Olive Oil
  • ¼ Teaspoon Salt
  • Teaspoon garlic powder
  • dash Black Pepper

Instructions

  • Cut red potatoes into small pieces
  • Add olive oil to your pan and allow to warm up. Add in red potatoes and sprinkle seasoning over the top.
  • Cover and cook for 8 minutes on medium high, stir potatoes half way
  • Lower heat to medium low, stir and continue to cook for an additional 8 minutes
