Crock Pot Cheesy Hashbrowns Recipe
Many times over the past year I have expressed my deep love for my Crock-Pot! Today I fell even more in love with my crockpot when I tasted these Crock Pot Cheesy Hashbrowns.
Not to be too cheesy…but they are simply scrumdiddlyumptious (which my spell check does not like but I love)
You don’t have to peel, dice, chop, slice, marinate, squeeze, or any other random kitchen exercises to make this lovely dish all you have to do is crumble up some cheese crackers and pour the rest of the ingredients into the crock pot and a few hours later your house will smell divine and you get to enjoy cheesy hashbrowns!
I love how easy this slow cooker side dish recipe is to make. It is the perfect side dish for breakfast or brunch. The crunch of the cheese crackers paired with the hash browns is just plain epic.
Serve with eggs, ham, bacon, or your favorite breakfast recipe. This crockpot cheesy hash brown casserole is perfect for Thanksgiving or Christmas.
You don’t have to worry about taking up space in the oven especially on busy holidays.

Ingredients
- Frozen hash brown potatoes
- Cream of Mushroom soup
- Milk
- Shredded cheddar cheese
- Butter
- Dried chopped onion
- Cheese cracker crumbs
- Salt and pepper to taste
Optional – Sour cream, garlic powder, onion powder
Soup – You can use cream of cheddar soup, cream of chicken soup, or other cream flavored soups if you want to change up the taste of the hashbrowns.
Equipment needed
Non-stick cooking spray
Large Bowl- We are big fans of this glass batter bowl that has a handle. It makes it easy to mix ingredients and keeps the mixing bowl steady on the counter.
Crockpot- We suggest using a crockpot that has a digital timer that automatically switches the slow cooker to warm after a set amount of time. This helps make sure your dinner cooks perfectly and you don’t have to stress about what time it is going to be done.

Recipe Tips
Make sure to spray the crockpot with non-stick spray so the cheesy hashbrowns do not stick completely to the side.
You can mix the ingredients in a bowl or right in the slow cooker. I tend to mix everything in the slow cooker so it is one less bowl I need to wash.
1 sleeve of Ritz Crackers is just a little over what you need for the recipe. Most of the time I just toss the entire sleeve in and figure it adds just an extra bit of crunch.
You can also change up the cheese for new flavors.
Store leftovers in an airtight container in the fridge.

Ingredients
- 16 Ounce frozen hash brown potatoes
- 10 .¾ Ounce Cream of Mushroom Soup
- 1 ½ cup Milk
- 1 cup Shredded Cheddar Cheese
- ½ cup Butter melted
- ¼ cup dried chopped onion
- 1 cup cheese cracker crumbs divided
Instructions

Spray Crock Pot or use Crock Pot Liners

Stir together hash browns, cream of mushroom soup, milk, cheese, butter and onion along with ½ of the cheese cracker crumbs

Pour into greased Crock Pot

Top with remaining cheese cracker crumbs

Cook on high for 3-4 hours
